1. Heat the oven to 200°C / Gas mark 6. Lay the Tomatoes & Peppers in a roasting dish and drizzle with Olive Oil. Mix the Lemon zest, juice & Basil (saving some Basil to sprinkle over when serving) and smother over the Seabass.
2. Lay the marinated Seabass on the roasted Veg and place in the oven for 20-25 minutes. The Seabass will be white and flaky when cooked.
3. Serve the Vegetables & Seabass on a plate and sprinkle with Basil. Serve immediately.
